In nature, no two days are the same. Sun, rain, cold, each element shapes the flavors that unfold. At Hemel & Aarde, our menu follows these rhythms. Chef Rene van der Weijden and his team work with what the earth offers at that moment, guided by patience, precision, and a deep focus on vegetables.

Discover our restaurant in the historic Polman’s Huis, under the same roof as Hotel The Nox. We are open for dinner from Tuesday to Saturday and for lunch from Thursday to Saturday.

Wine Bar Hemel & Aarde

Next to the restaurant is our younger sister: Wijnbar Hemel & Aarde. Here, the sommelier team follows the same philosophy as in the kitchen: wines that follow the rhythm of nature. Classic favorites, hidden gems from small producers, and unforgettable surprises.

Bites and snacks come from Chef Rene’s kitchen and change with the wines, always tailored to the occasion.

Our menu

Our cuisine works in harmony with nature. What you eat is determined by what the moment and the earth have to offer. Every flavor is carefully crafted, every vegetable cherished, with a deep attention to techniques like fermentation and pickling. This way, we bring out the best of the seasons and prevent waste.

At Hemel & Aarde, you can choose from three menus:

  • Hemels – our most luxurious menu according to our vision.
  • Aarde – a vegetarian adventure, focusing on the full richness of vegetables.
  • Hemel & Aarde – the best of the moment, with a subtle touch of meat or fish. We apply the 80/20 principle.

For dinner, we serve 5, 6, or 7 courses (on Fridays and Saturdays, only the 6-course menu is available, with additional courses available). For lunch, we offer 3, 4, or 5 courses. We are happy to accommodate any dietary requirements or allergies; please contact us in advance.

Private Dining

Adjacent to the wine cellar you can find our Private Dining, an attractive vaulted space that is suitable for dinners, meetings and presentations with a private character. The room has a large table with a capacity of 20 people (corona seating: max. 8 people). In addition, the room has audiovisual facilities for presentations and meetings. The Private Dining also has its own entrance on the Kromme Nieuwegracht, which can only be reached by boat.

To ensure a smooth welcome, we bid farewell to lunch guests at 4:00 PM; Hemel & Aarde closes at midnight.
